Happy Sunday!
It’s been a little bit since I last wrote about our adventures, and wow, did we have some!
As mentioned in the last installment, a crazy winter storm brought snow that hasn’t been seen in quite some time and breaking records across Central Texas! In my area, we received 5.5 inches! Icy roads throughout the night led to a snow day for the kids, so we had fun making snow cream and drying out!

The next weekend was Martin Luther King Jr. Day, giving the kids another three day weekend. We linked up with a couple of other family friends and rented a house in Fredericksburg to spend some time on a day tour of the town. Our first stop was the LBJ State Park.

The park offered many trails to walk on and a living farm with rangers dressed in period clothing.
Afterwards, we ate at the Fredericksburg Brewing Company and enjoyed most of their shareables menu! Six adults and eight kids can certainly put away some food! I wish I had thought to take a picture of the table after the kids had picked every plate clean!
Then we headed to Barron’s Creekside, where we stayed in cabins on a vineyard.

Our accommodations included the Hilltop Chalet, which is a divided cabin featuring two one-bedroom back-to-back units each with their own kitchen. A good couple friend stayed on the other side. These pictures do not do the place justice!



We really enjoyed this place and look forward to returning to stay at their other cabins, especially the converted settler’s wagon!
New recipes during this time included a Slow Cooker Beef Ragu over egg noodles and Slow Cooker Beef Gyros. Both were incredibly tasty and pretty good hits with the kids!
